- Beat the Cream Cheese: In a large mixing bowl, place your softened cream cheese. Using an electric hand mixer or a stand mixer with the paddle attachment, beat the cream cheese on medium speed for 2-3 minutes until it is completely smooth and creamy, with no lumps remaining. Scrape down the sides of the bowl with a spatula.
- Add Sweeteners: Add the marshmallow fluff and the sifted icing sugar to the bowl with the cream cheese. I find that beating these in on a low speed to start prevents the icing sugar from flying everywhere. Beat until just combined.
- Incorporate Liquids: Pour in the vanilla extract and 1 tablespoon of milk. Continue to beat on medium speed for another minute until everything is well incorporated and the mixture is light and fluffy. If the dip seems too thick for your liking, add the second tablespoon of milk and mix again.
- Create the Grinch Green: Add a small amount of green gel food colouring to the bowl. It's best to start with just a few drops, as gel colours are highly concentrated. Mix on low speed until the colour is evenly distributed. Add more colouring, a tiny bit at a time, until you reach your desired shade of Grinch-green. - Chill the Dip: Transfer the finished dip to your serving bowl. Cover it with cling film and place it in the refrigerator to chill for at least 30 minutes. This step helps the dip to set up slightly and allows the flavours to deepen.
- Add the Heart: Just before serving, carefully place the large red heart sprinkle in the centre of the dip to represent the Grinch's heart that grew three sizes. If you don't have a sprinkle, you can use red icing to carefully pipe a small heart.
- Serve and Enjoy: Arrange your chosen dippers—like pretzels, fruit, and biscuits—around the bowl of Grinch Dip and serve immediately. It's a wonderful part of a dessert spread, alongside treats like my Biscoff Truffles.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. The chill time is essential for the dip to set up and for the flavors to meld.
